Cherry Carnitas Sandwiches

Ingredients
1 (3 to 4 lbs) pork shoulder roast
2 1/2 cups Northwest Cherries®, pitted and chopped (divided)
1 red onion, sliced
4 cloves garlic, chopped
3 canned chipotle peppers, chopped
3/4 cup beef broth
1/2 tsp salt
2 Tbs grill seasoning
1 pkg Brookshire’s Onion Hamburger Buns
Directions
- Trim pork of any excess fat; discard fat. Place pork in a slow cooker. Add 1 1/2 cups cherries, onion, garlic and peppers around the pork. Stir the salt and grill seasoning into the beef broth. Pour over the meat.
- Cook on low for 6 to 8 hours until meat is tender and can be shredded and pulled apart with two forks. After shredding meat, place slow cooker on high. Cook for 1 more hour, so the juices can absorb into the meat.
- Remove meat to a serving dish, and keep warm in a 350° F oven until ready to serve. Strain liquid from the slow cooker into a saucepan. Add remaining cherries. Bring to a boil, and reduce to a simmer. Let the mixture reduce by half. Serve sauce alongside the meat with the hamburger buns.
